Product: Riste d’Aubergines is a traditional Provençal speciality in which eggplant is cooked with tomatoes and aromatic herbs until rich, soft and deeply flavourful. Rustic and comforting, it captures the vegetable-driven cooking of Southern France. Serve warm as a side dish with grilled meat or fish, spoon over rice or pasta, or enjoy at room temperature with crusty bread. It can also form part of an apéritif or Mediterranean sharing table alongside olives and cheese.
